Healthy Zucchini Bread – no added sugar

Again, I find myself with ample amounts of zucchini. This year, I decided to make a gluten-free, no-sugar-added recipe for my health conscious friends. I think it turned out great! However, If you are wanting a very sweet zucchini bread, you may need to add a glaze or some chocolate chips. 🙂

Healthy Zucchini Bread Recipe:

4 eggs 3/4 Cup Pecans or Walnuts
3/4 C. Apple Sauce 2 tsp Vanilla Extract
3/4 C. Grated Coconut 2 tsp Salt
3 C. Almond Flour, 2 C. Brown Rice Flour 1 tbsp Cinnamon
2 C. Peeled, Grated Zucchini Juice of 1/2 Lemon
1 C. Grated Apple 1/2 tsp liquid Stevia

Directions:

  1. Preheat oven to 350 degrees F. Grease 2 loaf pans.
  2. In a large bowl combine; eggs, apple sauce, vanilla, lemon juice, stevia. In a separate bowl, combine flour, salt, cinnamon. Stir flour mixture into egg mixture. Fold in nuts, zucchini, apple and coconut. Pour into prepared pans.
  3. Bake 1 hour. Let pans cool 10 minutes before removing to wire racks.

  1. Does it have to be so heavy on the nuts? Seems like a lot of calories for a snack… I know walnuts have lots of omega 3, But there’s the cocnut and the almond flour, too. What happens if we use a little whole grain flour in place of some of those nuts. Love the other ingredients!
